This is my go to cookie recipe for those days. It's a super simple peanut butter cookie that has only 4 ingredients that I guarantee you have in your pantry. Seriously! And it's flourless, so they are even gluten free.
You can whip these peanut butter cookies up in just a few minutes, and have delicious homemade cookies out of the oven anytime. I love surprising my boys with these special treats after school, and they even like to help make them too!

4 Ingredient Peanut Butter Cookies
Ingredients:
- 1 cup peanut butter (or try Sunbutter if you have allergy concerns)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 egg
Directions:
Preheat oven to 375 degrees. Mix all ingredients in a bowl until smooth.
Use a small scoop or roll into 2 inch balls. Place onto greased cookie sheet (or use silicone liners).
Press a fork into the balls in an X shape.
Bake for 10 minutes, or until cookies are golden brown.
