I'm not a vegetarian, but I love meatless meals. I always make sure at least one of our dinners every week is meatless, as it helps us to eat more vegetables and also saves money. Meatless meals are especially easy (and frugal) in summer, when there are so many fresh vegetables in season. So I thought it would be fun to put together a whole week of meatless meals.
Sunday: Eggplant & Zucchini Lasagna (The Eyes of a Boy). Sunday always deserves a special meal and this vegetable lasagna looks amazing.
Monday: Smashed Avocado & Bean Sandwich (Syncopated Mama) made on this Easy Peesy French Bread (My Mundane and Miraculous Life). Add some fresh corn or a bowl of your favorite summer fruit as a side.
Tuesday: No Boil Veggie Pasta Bake. Take advantage of your garden with this super easy one dish meal.
Wednesday: One Pot French Onion Soup (Study at Home Mama) made with the heels of Monday's bread. Add a light salad like this Strawberry Spinach Salad (Nemcsok Farms). You've made it halfway through the week! Celebrate with a decadent meal that's actually quite simple.
Thursday: Quick, Easy, Healthy Vegetable Stir Fry (Snotty Noses). This is a wonderful recipe chock full of vegetables and fun for kids too!
Friday: Homemade Pizza (Playground Parkbench). Friday is always pizza night in our house. Skip delivery with this healthier homemade version.
Saturday: Quick & Easy Ramen Pasta Salad. Saturdays are always too packed with activities to have time to cook. Make this ahead of time and eat it outside for a Saturday evening picnic!
