Zucchini is one of my family's favorite vegetables. Let's be honest, it's one of the few vegetables I can usually get my kids to eat! Especially when it's served in something delicious like zucchini bread or of course a chocolate cake (don't tell them there's vegetables in there).

It's a good thing that we all like zucchini, because it grows in abundance in our garden. And when you get a good batch of zucchini, it goes a long way! I hate to throw anything out so I am always on the lookout for awesome zucchini recipes. I've shared two of our family favorites before, and I'm adding 15 more to the mix.
